Instructions to make Coffee & chocolate cake with coffee & chocolate sugar syrup:
- Prepare 2 8"by 4" round pan by lightly greasing with butter or oil, & coating with flour. Preheat oven.
- In one large bowl, sift in 4cups of flour, & 2tbsps baking powder together, add 2cups sugar & mix thoroughly. Add 4eggs, 2cups milk, 2/3cups oil, 2tsps vanilla & mix till smooth.
- In a smaller bowl, sift in the remaining flour, cocoa powder, baking powder & baking soda together, add sugar & mix thoroughly. Add egg, 1/4cup oil, 1/2cup milk & 1tsp vanilla & mix till smooth & well mixed. Add the 1/2 cup boiling water last.
- In the first bowl, add the 1/2cup of hot coffee & mix till combined.
- Pour both batters in each pan, alternating both to form a swirl of both cake batters in each pan. Bake for 45minutes on medium heat, or till a toothpick inserted in the centre of both comes out clean. Remove from heat & run a knife round the edges & allow to cool a bit before removing from the pans, poke holes in the cake using a skewer & pour the chocolate & coffee syrup over the cakes, & then allow to cool.
- For the syrup, dissolve 3tsps of coffee in 1tbsp of hot water, add 2tbsps cocoa powder, & 1/2-1cup of icing sugar, mix & place on low heat, stirring till desired texture is achieved.
