Don't be intimidated—if you've ever heated milk on the stove to make a cup of hot chocolate, you'll find the basic cooking principles for chocolate mousse to be very similar. Chocolate mousse has very few ingredients so it's important to use the best quality chocolate — its flavor will shine through. I like semi-sweet chocolate but if you prefer your mousse with a darker chocolate flavor, use bittersweet. Remember, the higher the cacao percentage, the less sweet the chocolate..

Instructions to make Chocalate Mousse:
  1. Melt the chocolate and butter in the microwave or in a double boiler. Remove from the heat, then add coffee and set aside to cool.
  2. Stir egg yolks in to the chocolate mixture and mix well, cover and refrigerate.
  3. Whip the egg whites with cream of tartar until fluffy,  gradually add two table spoon of sugar and continue to beat until stiff peaks form and keep it aside.
  4. In another bowl, whip the cream with the remaining two tablespoon of sugar and vanila extract untill soft peaks form.
  5. Remove the chocolate mixture from the refrigerator and gently stir the peakform egg whites.
  6. Add the whipped cream and gently fold in the chocolate mixture.
  7. Spoon the chocolate mousse in to six serving glasses and refrigerate for couple of hours.
  8. Serve with additional whipped cream and shaved white chocolate.

This makes it the perfect make-ahead dessert! While chocolate mousse is just fine all on its own, you can fancy it up by adding a dollop of whipped cream to each dish before serving. Chocolate mousse is the decidedly decadent, old-school dessert you've been overlooking for far too long. And honestly, I get it: Classic chocolate mousse is a little fussy and requires separating eggs, getting melted chocolate to the just right temperature, and lots of careful folding. Chill metal mixing bowl and mixer beaters in freezer.
