This super easy tiramisu recipe is my favorite lazy girl recipe ever! It is a no bake dessert that will not disappoint the crowds. It is made with mascarpone cheese and lady fingers dipped in coffee, perfect pick me up dessert.

The ingredients needed to make Super Easy ‘Tiramisu’:
  1. Prepare 1 large packet of Savoiardi (*Sponge Fingers) *about 500g
  2. Prepare 2 cups Espresso or Strong Coffee
  3. Prepare 1/4 cup Marsala Wine *OR your favourite liquor such as rum or brandy
  4. Prepare 2 tablespoons Cocoa Powder
  5. Make ready 1 tablespoon Ground Coffee
  6. Prepare <Bowl 1>
  7. Get 3 Egg Whites
  8. Take <Bowl 2>
  9. Prepare 300 ml Cream
  10. Make ready <Bowl 3>
  11. Get 3 Egg Yolks
  12. Take 1/3 cup Caster Sugar *do not add it yet…
  13. Make ready 250 g Mascarpone

I skipped that step and combined the mascarpone with the whipped cream. That makes this a completely no-bake, no-cook, super-duper easy recipe! Both of these recipes are super simple cookie recipes that have just a few basic ingredients. This is an easy Tiramisu recipe - it's made the traditional way so the eggs are not tempered.

Instructions to make Super Easy ‘Tiramisu’:
  1. Make 2 cups of Espresso or strong coffee. It can be 2 cups hot water mixed with 4 tablespoons instant coffee. Add Marsala and mix. If you use stronger liquor, 2 tablespoons would be enough. *Note: You probably don’t need 2 cups coffee, but I found 1 cup is definitely not enough.
  2. For the filling, prepare three bowls. Place Egg Whites in Bowl 1, Cream in Bowl 2, and Egg Yolks in Bowl 3.
  3. Bowl 1: Using the electric beaters, beat Egg Whites until stif peaks form.
  4. Bowl 2: Using the same electric beaters, whip Cream. Do not worry some Egg White gets in the cream as you will mix everything together later.
  5. Bowl 3: Add the Caster Sugar to the Egg Yolks, and beat using the same electric beaters until pale and thick. Add the Mascarpone and mix well.
  6. To the Egg Yolks and Mascarpone mixture in Bowl 3, add the whipped Cream and mix gently to combine well. Then add the Egg Whites and gently fold into the mascarpone mixture.
  7. Now you can assemble ‘Tiramisu’.
  8. Dip the Sponge Fingers very quickly into the coffee and line them in one layer in a large dish. You can break some to fit them in. Spoon half of the filling over the Sponge Fingers and smooth the surface.
  9. Repeat for the second layer with the coffee-dipped Sponge Fingers and the rest of the filling. Cover and refrigerate for at least 2 to 4 hours.
  10. Right before serving, dust the top generously with Cocoa Powder mixed with Ground Coffee.

The key to a rich-yet-light Tiramisu is to beat the egg whites until fluffy, then fold it through the rich cream mixture of sugar, yolks and mascarpone. Today I decided to forget proper and make a super simple tiramisu. My motivation began with a glass of International Delight Mocha Iced Coffee. I love drinking it, cooking with it and baking with it. I like hot, fresh brewed coffee in the morning and I like to sip a glass or two of iced coffee throughout the day. - super fine sugar - cocoa powder.
